Prince Edward County (PEC) has a long history of agriculture rooted in its Loyalist ancestry. From the Barley Days of the late 1800's through the bustling canning industry during the mid 20th century, PEC continues to host a multitude of farms large and small. Its climate, moderated by Lake Ontario, provides a growing season favourable to many crops.

Owned and managed by Timothy Noxon, Mirepoix Farm is dedicated to bio-intensive organic growing and hand-crafted production methods that allow taste and quality to shine. Tim has been farming for 16 years and has been the co-recipient of Ontario's Premier's Award for Agri-Food Innovation Excellence, as well as Slow Food Canada's Local Food Hero award.
Mirepoix Farm's growing methods and products are Certified Organic through Ecocert Canada according to the CFIA's Canadian Organic Standards.

Aside from the joy it gives us to work the land, our main goal is to help provide ingredients for delicious meals that might cross your kitchen counter! We're firm believers that the best food starts with the best ingredients.
We continually search out and try new varieties of plants, save seeds and develop varieties that can thrive and provide in our growing environment. Along with the weather and terroir, each and every species contributes its own genetic character to the flavours on our plates.
We strive to produce as many ingredients as we can and source any others from local producers. Aside from a few bulk staples, we grow all of the peppers, onions, garlic and herbs that go into our recipes. We source certified organic vinegar and honey from producers in Ontario. Hand-harvested sea salt from a family-run salt works in Portugal. Certified Organic olive oil from Greece. And Certified Organic raw cane sugar from producers in South America. Our water purification/sanitizing system utilizes ozonation as an environmentally friendly option - inputs of only electricity and water, with resulting by-products of oxygen and H2O!
Freshly grated peppers are blended by hand with sea salt and lacto-fermented in aging barrels for many months as a first step towards becoming our hot sauce!
The term “mirepoix” originates from the 18th century - in the time of Gaston Levis, the Duc of Mirepoix and ambassador to Louis the XV in France. His personal chef de cuisine is credited for establishing and stabilizing a collection of vegetables and herbs used as a base in many dishes. - most commonly, a combination of diced onion, carrot, and celery - sauteed or sweated out to sweeten but not caramelize their nature. Over time its possible that "mirepoix" became a slang term used to describe the process. "Hey chef! - do that Mirepoix thing!"
