This edition is slightly different! We fermented the mash initially in an oak barrel soaked in Calvados Apple Brandy, then aged and blended with 3 other peppers. Still a classic simple sauce and not too hot!
Louisiana style, pure and simple. 
Our first hot sauce, inspired by a portuguese tradition.
